There is a method for removing an old hearing device explained in the linked discussion thread below:

Eg: says:

"You can manage your Made for iPhone hearing aids under Settings > General > Accessibility > Hearing.

Tap the name of the hearing aids you would like to remove, and you'll be given an option to unpair the hearing aids."
