Will texting work between iphones ie imessage, internationally?
Can an iphone (US carrier; no international plans) function in the UK, using imessage only? Or will a SIM, or eSIM, of a UK-carrier, be required?

Maybe. In order to log into iMessage, a phone has to be able to send an international SMS. In theory, after the phone has logged into iMessage, it doesn't need to do that any more and should be able to continue to send iMessages even if there is no cellular access. In practice, though, it's not that simple. iPhones are designed to work best with a continuous data connection. If the iPhone only has access to WiFi, that connection is not continuous and things can go wrong. One of them is that the phone will disconnect from iMessage and need to log in again, requiring the international SMS.
Short answer: I wouldn't count on it working without a SIM (e or physical).
