Connecting Bluetooth device to Apple Watch

Is it possible to connect Bluetooth devices that are not from apple (like JBL, Samsung) to your Apple Watch, when the phone is not around?

Apple Watch Series 8, watchOS 10

Yes.

You just have to figure out how to put the Bluetooth device (JBL, Samsung, etc...) into "Discovery Mode" so that the Apple Watch will see that it is available for pairing.

I've paired a very old pair of wrap around the back of your head Bluetooth headphones (had to Google to find the instructions that put them into Discovery Mode), and I've paired Sony MDR-1000X noise canceling over the ear headphones with my Apple Watch (for these I still had the instructions, but I did have to read them to figure out how to put the MDR-1000X headphones into Discovery Mode).
