I really want to transition from OneNote to Apple Notes, but it's missing some basic features.
I jumped into the Apple ecosystem in 2013 and Notes back then was text based only and did not have what it has now. Regardless of the limitation of tables, as soon as tables were added is when I said goodbye to OneNote.
The big reason I did is because the macOS version of OneNotes will only let you save notebooks to OneDrive and not locally on my MacBook. On the Mac it's all Microsoft cloud or nothing. You can't even save notebooks on iCloud.
If you watched the WWDC24, it was announced that text highlighting is coming to Notes but looking at your list there are a lot of deal breakers and if they are truly important then I would suggest doing a search for Notes on the Apple App Store and look at what's available there.
The biggest challenge moving from Windows to macOS was to stop thinking in how things are in Windows. I'm curious as to what issues you had in Pages with regards to tables.
