In System Settings > Lock Screen you can set a timer for "Turn display off when inactive." You can also set a separate timer for "Start Screen Saver when inactive." These settings used to be in Energy Saver but in Ventura were moved to Lock Screen.
So, for example, you might set the screen saver to start after 10 minutes of inactivity and then turn the display off (sleep) after 20 minutes of inactivity.
