I have the situation, that sometimes, even though I am completly reducing the sound / volume to zero, when opening an app or playing a video. The sound has been increased again automatically.
No one else but me should be able to change the sound on the phone.
What can I do?

Turn Focus Off:
With Focus, settings of such when it comes to audio and apps, can be created. So, see if Focus is enabled. If a notification, then that would be why you are getting a sound with Focus. Turn on or Schedule a Focus on iPhone - Apple Support
