I want to manually switch microphone input. Can someone suggest me?
Because if I connect USB hub, the microphone and audio on ipad disappear.
So, during using with USB hub, I cannot make a call nor voice recording.

You may need to use a different USB-C hub.
Some poorly designed hubs that include a built-in audio interface always take priority for audio. Where implemented, if you wish to use the iPad's internal microphone(s), the only solution is to use a more suitable hub.
oh, there should be a switch over between microphones in ipad os. It hurts. I can use this hub with my window PC. I hope ipad os would have this feature in future.
