Well… I was thinking that you could AirPlay your own email to another device…
This is for when you accidentally delete your Apple ID before you log out so then when you do this, it automatically gets rid of the old email that you can’t use and signs you into the one that that is active and that you can use

Let’s assess your situation:
It sounds like you’ve possibly entirely deleted your AppleID w/ Apple (i.e from https://privacy.apple.com/ ) without signing-out of at least one the devices signed-in w/ that AppleID.
Is that it ?
Well … that unfortunately puts you in a bit of a bind.
Your iPad is now Activation-Locked (i.e. made unusable) to an AppleID and password combination which no longer exists, so it’s impossible for you to unlock.
Your ONLY remaining option is to request unlocking services from Apple - who will require appropriate proof of ownership.
This is generally understood within this community to be an original purchase receipt reflecting the exact identifying info of the specific device (e.g. serial number).
Without successfully completing this action, the iPad will remain a paperweight.
