Apple Mail - can I organise emails subject line only (but sorted by date)?

I am utterly mystified by what Apple Mail considers to be a 'conversation'. When I organise a mailbox by conversation, Mail groups dozens of emails that have senders in common, but with dozens of different subjects, whilst excluding other emails that have the same senders and the subject line I'm trying to follow. I'm guessing I have set a preference or view incorrectly to achieve this confusion, but I can't tell what.

I would like to be able to group emails by subject only, but sorted by date so that when a new email on that subject arrives the thread will be at the top of the Inbox. How should the Settings and View be set to achieve this? Thanks.

The problem with this response is that once you change to sort by Subject, you can only choose A-Z or Z-A. No longer can you use Newest Message on Top. Per the OP they want both to be able to sort by Subject AND sort by date. As far as I can see, this is not possible using Apple Mail. Perhaps Outlook or Thunderbird can. Not sure.
