How can I fix missing artwork issue on iPhone Music Library?

My iPhone was previously working fine, but I added some music from my iTunes library (I don’t subscribe to Apple Music, it’s all my own music) yesterday and the artwork disappeared from my entire library. So I deleted all the music from my phone and set about adding it back. There’s 108,000 tracks in total, but I just added 33,000 to start with and all was fine, artwork back. But then as soon as I started adding the next batch the artwork all disappeared again.

Has anyone else had this issue? If so, how did you sort it out? Otherwise, does anyone have any ideas what I can try next?
