Hey, so I’m getting a MacBook air (2017) and I wanted to know what is the current software version of Mac OS does that MacBook support?

FYI, although Monterey is still one of the most recent three major versions of macOS, it will drop off that list in a few months when Apple releases Sequoia. Soon after that, Adobe and Microsoft will probably drop support for, and stop selling applications that run on, Monterey.
