Two days ago there were many reconditioned 27 inch iMac. Many of them did not have a price, so I presume that those particular models were not available. But now I am not finding any at all.

The 2019 and 2020 27" iMac's are hard to come by these days.
OWC macsales.com currently has one 2017 27" iMac Pro and one 2017 27" iMac for sale.

Another option, is to get a Mac Studio or M2 Mac mini and a 27" aftermarket external display.

Apple's selection of Certified Refurbished Macs, iPhones, and iPads changes daily. I'm not seeing any 27" iMacs in the U.S. Apple Store's Certified Refurbished section.
As for other vendors who sell used Macs – their selection is "catch of the day", too. OWC is one such vendor. Their site currently shows only a few older 27" iMacs, from Late 2012 to Late 2015, plus some 27" iMac Pros. I have seen newer 27" iMacs there – but right now, they're sold out.

I'm not sure if you were looking at the Apple site in the U.S. but they do not use the term "reconditioned." At any rate, what is sold there varies on what they currently have available.
Look at www.macsales.com, they have refurbished 2017 27” iMacs. However if I were in your shoes and wanted a 27” iMac then buy a new or refurbished MacMini and add a 27” Samsung display, much better than buying really old technology!
My daily driver is an M2 Mac Mini Pro with a 32-inch LG 4K Ultrafine display. Although I have a 2020 27-in iMac in the other room, this is the go-to device.
