Apple has not explicitly said anything about adding that feature to its upcoming Watch series 10/X. That said, it could be years away, and it wouldn’t be worth holding out to get a watch until they add it, as that could take years to be available, if ever.

Glucose monitoring will need to be FDA approved as a medical device. It it were in FDA testing, it would be public knowledge and reported in the media. FDA doesn't hide their testing. Historically, new Apple Watch series and models are introduced in the fall. It’s not possible for it to be approved as a medical device in just a few months.
Non-invasive (no blood needed) glucose monitoring is a technology still in development by all brands. Cheap watches on Amazon and Temu claim to provide it but they are lying through their teeth. The patches that diabetics wear on their skin still have skin abrasives to get readings.
And to add to the fun, there could be patent issues involved with the technology. Just look at the oxygen sensor ban in the U.S.
Not to mention liability issues for something producing results directly impacting administration of medications.
