The M3 Macbook Air can support a 2nd external display IF AND ONLY IF the laptop lid is closed.

Older Macbook Air models ONLY support 1 external monitor.
If you want more external monitors you can use a DisplayLink adapter (not to be confused with DisplayPort; totally different), and you install DisplayLink software on your Mac that talks to the adapter.

WARNING: Running DisplayLink software disables notifications. You have to manually turn them back on.
System Settings -> Notifications -> Allow notifications when mirroring or sharing the display [X]
Why? DisplayLink make it look like you are sharing your screen for a presentation, and typically presentors DO NOT want notifications popping up in the middle of their PowerPoint slides.
WARNING: Protected video content does not play on Mac while DisplayLink screens are connected (eg. iTunes, HBO, Amazon Prime, Netflix, Disney+ YouTube TV, Udemy, etc...).
