Hello! Why is the video output in Final Cut Pro settings greyed out?
If you mean A/V Output in the Settings, if it is disabled, then you simply don't have an external monitor that FCP recognizes connected to your Mac.
Please explain in detail and add a screenshot.
With your lack of information, the only thing that comes to mind is that you haven't selected the timeline.
Click anywhere in the timeline and see if the export option becomes live.

Your external display must be set to either 4K or 1080p.
What Ian said. I am also not sure what it is that you mean, maybe "AV Output"?
