How do I delete this new Messenger end to end encryption I did not ask for?!

While you are discussing this Meta / Facebook Messenger app behavior and your preservation preferences with Meta / Facebook support, ask them how to export the conversations.

Apparently, Meta / Facebook does have a means of exporting your data, including Messenger conversations.

Are you referring to Facebook Messenger? If yes, this forum isn't the place to seek help. Messenger is owned by Meta, NOT Apple. Contact them for help if you have concerns. Apple has nothing to do with Messenger in any way.

This is likely unrelated to end-to-end encryption directly, and rather with some conversations-related requirement associated with (not) enabling the end-to-end encryption feature within Messenger.

And for completeness, the only way to mark data as being important is with backups.
