Does changing Apple ID on one phone change it for them all?

My mum bought me my phone as a gift a few years ago and to keep it a surprise she put it under her Apple ID. I’m 17 now and she still has access to every app I download and every photo that uploads to iCloud which isn’t ideal. I want to change to my own Apple ID so I changed the email address in my details. Now I’ve realised that my mums phone, iPad and other devices are connected to her Apple ID so I’m wondering if me changing the email on my iPhone changed the details on all of them? I don’t want to have to create a whole new Apple ID because I have various subscriptions I don’t want to lose access to.

Here is how to resolve this: How to “unshare” an Apple ID - Apple Community

Switching to your own Apple ID is appropriate here. Sharing tends to end badly.

The new Apple ID only affects the devices that have been transitioned to that Apple ID.

Subscriptions and purchases cannot be migrated, but enabling and using Family Sharing can allow most to continue to be accessed.

What you are encountering here is (part of) why sharing is not recommended.

The mess only accumulates over time, too.
