I have downloaded the Apple MIgration Assistant on my Windows PC in order to transfer data to my new MacAir but I don't see anyting on the PC screen. How do I check the progress of Migration Assitant on my Windows PC?

You really can't. The Mac is doing all the actual migrating. It is copying information to your Mac. And it should give you a progress bar indicator of the migration on the Mac. I haven't done a migration in awhile, but i believe there is a menu option on the Mac migration software for logs to see more details.
