if my Apple Watch was stolen and they know my password and could reset the whole Watch will the serial number still be the same? I’m trying to check and see if this is my watch or not.

they can use the watch if they know your appleID password (if they do change it as fast as you can)
but they can't change the serial number
An Apple watch's serial number is engraved on the watch in one of the watchband channels.
