Are you truly wanting to upgrade the version of macOS?
Or are you primarily hoping to install a newer operating system to access more modern software or some newer piece of hardware?
Some people out in the interweb talk about the idea of installing a lighter weight Linux distribution on old Mac’s that are still good functional machines but that are no longer capable of receiving macOS updates. In that case you would no longer be able to use the same Apple software unless there was a version available that was compatible with your choice of a hypothetical new OS.

there may be ways to work-around your concerns that don't involve MacOS changes.
