How to lock my apple wallet or card

Apple Wallet is not lockable. It just holds in one place all your credit, debit cards, loyalty cards etc. You lock individual payment methods/cards using their respective mobile app. For example if you want to lock your American Express card, open the AmEx app, pick the individual card to lock and activate the feature.
What merchant is charging your account? You can request a refund from the merchant or dispute the charges with the credit card company.
