I currently have my personal Apple Cash account set up. I am selling an item and the person is specifically requesting to use Apple Cash. Am I able to use another email to receive the payment? I don’t want to give them my personal email or number.

No, you can only have one Apple Cash account per Apple ID. But accounts get locked and users black listed when they get found out. Multiple accounts is a good way to be banned forever.
In addition, commercial activity is prohibited, unless you have a merchant account that accepts Apple Pay. Again, your Apple Cash may be locked and you’ll loose access to the account.

I think I found where you’re at,
iPhone > Settings > Wallet & Apple Pay > Transaction Defaults > email > you select email to receive information related to Apple Pay transactions.
The above setting has nothing to do with receiving Apple Cash. Apple Cash is tracked by your Apple ID and any transaction will be associated to you’re email and phone number registered to your Apple ID.
So if I go to settings and my wallet and scroll down, it allows me to put more than one email address in there and select an email address. so this isn’t being used for which one I want to receive funds? I’m confused.
