I have never been able to mirror or do the sidecar from one device to the other. I have a Macbook Air 2017 with Monterey 12.7.5 and an iPad Pro 3rd-gen 17.5.1. They are both completely updated and signed on to the same account. I have even signed out and back in on both devices and restarted both devices as well. What can I do?

The Sidecar system requirements say that Sidecar works with MacBook Airs introduced in 2018 or later. You say that your MacBook Air is the 2017 model – which makes it too old to support Sidecar.
Your iPad Pro does support Sidecar, but that only helps if you're trying to use it with a compatible Mac.

If you are using an VPN app you must know that sidecar or mirror or even AirPlay won’t work from your iPad to the Mac
