I had looked for an answer to this and multiple threads said it wasn't possible. As of 7/2024 if you hold down command - option, then you can click on the items you want and format them all the same. I hope this helps someone!
This is the first item mentioned in the Pages v14.1 Help menu > What's new in Pages panel. It is strictly the command-Key (⌘) that permits non-contiguous text selection.
