Need to backup iPad before reset for selling but can't backup certain files

I'm finally getting around to selling mum's old iPad Pro 9.7" 1st Gen. I thought I could hook it up to my PC and backup various files but this option only shows the DCIM folder in Windows.

Next I tried backing up via iTunes. But, this only seems useful if restoring data to another iPad (which I'm not doing). I can't see any way to access the backed up data on my PC.

Someone suggested iCloud. But this doesn't show everything backup unless I'm missing something. For instance, Voice Memos. I can't see a way to access them on iCloud? I checked on the iPad and Voice Memos are definitely selected for Backup.

Any suggestions?

This support page outlines the natively supported backup methods for iPad and iPhone:

Native iOS/iPadOS backup and restore processes are dependent upon iCloud, or connection to either Windows PC (with iTunes for Windows installed) or a Mac (with iTunes or Finder - as appropriate for the installed version of macOS).

Natively supported methods offer full system backup - consisting of data and device settings.

While iTunes and iCloud backups save locally stored data and settings - individual files cannot be individually accessed or retrieved. If you wish to backup files such that they can be individually accessed, you will need to use an alternative solution...

It is possible to use a third-party App to backup data (but not device settings) to a variety of external storage options - including third-party Cloud services, external media devices and network storage. One App that comes readily to mind is FileBrowser Professional by Stratospherix:
