Apple basically only has encrypted data. What is shared in your Wallet app is what the Payment Method (credit/debit card) issuing bank shares with Apple. Your credit or debit card statement will probably have the most complete data, but for about 30 days (shorter or longer in some cases) you can see a limited set of data regarding the transaction in the Apple Wallet.

The data typically includes amount of sale, day, date, time of day, merchant name, location of transaction, and total amount of the transaction. More complete details may be available on the receipt the merchant issues.
