I want to delete old Apple Watch devices from my Apple ID as I no longer use them (either upgraded or broken). But will doing this result in also erasing or affecting any of my Apple Health tracking history over the years?

No, removing an Apple Watch from your Apple ID won't remove the health data it recorded. I upgraded to a newer model a couple years ago and all the data recorded by the previous Apple Watch is still in the Health app.
