I have an iMac (Retina 5K, 27-inch, Late 2015) that I want to update the OS as I'm finding more and more apps are unsupported on Mojave 10.14.6. Can I update to Big Sur or do I have to make the leap and go to Monterey which is what is shwoing when I go to the software update.
I am worried about updating as it always seems to come with more problems than it's worth but I think I'm at a point where I really have to.

You can update manually to Big Sur if you really want to, but it is recommended to update the most current version your Mac supports which is in-fact Monterey for your model of iMac.
Any specific reason you want to stop at Big Sur?

Back up your data, check the application compatibility table, click here, and then on the download link for Big Sur.
Catalina and above won't run 32-bit software and split the functions of iTunes up; use Go64 as well.

If you upgrade your Mac to Catalina or later,
Monterey is still one of "the most recent three" and will be for a few months until Sequoia comes out. Then you will see Adobe and Microsoft drop application support for Monterey as though Monterey was a hot potato.
Catalina and Big Sur have already fallen out of "the most recent three". They have the twin drawbacks of being too new to run 32-bit software, and too old to run current Adobe and Microsoft software. They are recent enough to allow you to run the current versions of Firefox and LIbreOffice – but you could run those on Monterey just as well.
