When I tap them, they briefly fill the whole screen, then fade away to the bottom. If I swipe up from the bottom, I can get the cascade of tiles or screens showing what I tried to open, but I can't get in to any of them. Apple apps, such as messages, maps and photos are all fine. The ONLY non-Apple app I have found that opens is my Chase banking app.

Try a forced restart.
• Press and quickly release the volume up button
• Press and quickly release the volume down button
• Press and hold the side button.
• When the Apple logo appears, release the button.

Resolved suddenly. I had previously turned my phone off and re-started, and checked for app updates. None of that had any effect. I don't know what resulted in a fix, but glad I didn't have to delete and re-install all the apps.
