Fidelity, Charles Schwab and etc... use a bank processing company so the name comes up as "UMB (3439)" or "BNY-Mellon jTy-1342". I want to change UMB (3439) and rename it Fidelity checking. If I have 2 or 3 banks I would like to transfer it to the right bank without cross-referencing it.

Currently, it’s not an option to change the default names that the issuing banks use. I don’t believe it’s something that can be implemented. Apple Wallet does not allow any customization and even the artwork is provided digitally and securely by the banks.
I agree it would be convenient, but the security around the Secure Element and Secure Enclave is unlikely to permit it.
