It uses your credit or debit cards to pay. As such any payments would be listed in the used credit or debit card's own statement.

Some providers support recent purchase history to be displayed in the Wallet app in your iPhone or Apple Watch. You can see any recent payments made with a specific card through Apple Pay in the Wallet app under the specific card used.
