While composing texts, using iPhone’s Messages app, I often, accidentally delete text—I may delete part or all off my text before sending. Is there way to undo the text deletion or, in someway restore lost text?

The best way is turning on Accessibility option "Shake to undo". You can find it in your iPhone System Settings > Accessibility > Touch > Shake to undo.
Then after you accidentally delete text, just shake your iPhone and you should see popup menu which ask you to want undo.
