Automatic redating of documents in Pages

How do i stop Pages from automatically redating documents when I open old documents in Pages and make no change to the document. I would like the document to stay at the date i made the original document.

Pages updates the "last opened" date of a document when opened, which can be confusing for tracking creation dates or versions. To avoid this, check document metadata, save as a new version, use PDF format for archiving, avoid unnecessary access, and create a document history. If these solutions don't fully address your needs, consider providing feedback to Apple for a better document date management feature.

Unfortunately my level of understanding is nowhere near as advanced as yours.

what is the document metadata?

How do I use PDF for saving?

How do I create a document history?

I am mainly writing very simple documents or letters not complicated documents.
