I have a check list of things to buy at the supermarket:
Sugar
Milk
potatos
salt
butter
...
Is there a way to sort this items inside the note to be shown as
butter
Milk
potatos
salt
sugar.
I know how to send the checked items to the bottom of the list, but this is to sort out the unchecked items by alphabetical order.

The Notes app on iPad does not currently support automatic sorting of checklist items in alphabetical order. However, you can manually sort items by opening the Notes app, selecting the checklist note, editing the checklist, and reordering items by cutting and pasting. If manual sorting is cumbersome, consider using third-party note-taking apps, task management apps, or exporting and sorting into a spreadsheet.

Have you considered using Reminders instead of Notes? Reminders allows you to sort items alphabetically. It also offers are really neat Grocery List option which sorts by category and within the category you can sort alphabetically.
