I am currently using iOS 14.8.1 in my iPhone 11. I am trying to update but it is not updating after several tries. I can’t even download any application from AppStore because of my older iOS version. Please look into this.

As you have not updated in a while you may need to use the "connect to a computer" option.
Also make sure your have plenty of free space in your storage.
