You can update an iPhone 7 to the latest release of iOS 15. See the links previously posted in this thread.

iOS 15 is the end of the line for the iPhone 7.

Google has decided to make their Gmail app require iOS 16.0 or higher, and has therefore abandoned support for your iPhone.
