How do I switch my voice recognition to Canadian spelling?

When I use my voice recognition to text, most of the time my iphone spells things the incorrect/American way (favorite instead of favourite, for example), so I have to go back and manually edit to the correct spelling.

How do I switch the voice recognition from American spelling to Canadian?

Automatic voice change based on language with voice over. I am Blind and using voiceover. When I get a message with text in Tamil, voiceover does not reading the Tamil text, while it read for other languages. All language and voice settings are properly configured. Happens in all messengers and apps. Have to manually change the voice to Vani. Cannot set Vani as default, since its English pronunciation is horrible. Please help to read automatically.

Can I download the Scottish Siri Voice option? My new iPhone14 had a Scottish accent available for Siri, which I selected. It changed back to the USA voice by itself and I tried to reset to Scottish accent and it is no longer an option! This change happened in one day of having new phone.
