Updating an iPhone 6s to iOS 17:
A. You Can't.
What you are trying to perform is not an option. This is because you model's hardware(6s) is not made to work with iOS17. So, take this as a good reason to upgrade. See here: iPhone Models Compatible with iOS 17 - Apple Support
B. Installing Updates:
You can always give it a go using a computer. See my User Tip: Update your iPhone Using a Computer - User Tip. If any updates are available, they will install, sure enough
