After the most recent update, the ECG feature has stopped working on my watch. It won’t read the ECG, showing the particle heart… or If it does start it will fail after a second or two. I have cleaned sensors. Turned off Bluetooth on both devices. I really don’t want to reset. I also turned off assistive touch.

Unpair and re-pair the watch. Everything will be loaded back onto it from the backup on your iPhone. If you take it to an Apple Store, that's one of the first things they will do.
What country/region is your watch set to?
you can go to apple support store to check it, if that happened after an update it might be a system problem because of the update, and this may not cost you any to let them check it

I powered off both devices, then Turned off Bluetooth on phone and watch. Then unpaired. Nothing so far has worked.
