There is NO 'Listen for' selection option available on the above-mentioned iPad; there is only 'Listen for hey, Siri'. I have tried all languages but the option never appears…

Correct, the iPad Pro 10.5" is not a model that supports just "Siri".
Perhaps consider that using "Hey, Siri" in place of "Siri" will result in far fewer false activations.
Aha! I searched and couldn’t find this particular information!
So, the 10.5 is conspicuous in its absence!
