For a week I would not worry about it. Maybe put it on as usual on the day you leave or the day before. Check the battery level (“hey siri, battery”). If it is any where between 50% and 80%, or even higher, call it good.

Turn off your Apple Watch, and put it aside until you return from your trip.

Press and hold the flat oval side button next to the Digital Crown, then tap the power button icon to turn it off.

If you were putting it aside for months, then getting it to the 50-60% range before turning it off would be good.

Your question is not very clear.

Do you want to stop charging once it reaches 50% of charge, or do you want to start charging it when it has 50% of charge?

Either way, use the included cable and a power adapter or a port on a computer to charge the watch, and remove it when it reaches the desired charge level.

Not sure what you are attempting to gain by stopping at 50% or starting at 50%.

You should just plug it in to charge when its convenient, for whatever length of time its convenient to do so. No need to micro-manage the charge level like that.

I am going to France for a week and do not want to take my Apple Watch. I was told by Apple Support that I could charge it at 50%. That confuses me, hence my inquiry as to how one would charge at 50%?

You put it on the charger, wait until it reaches 50% battery charge, and then remove it.

Micro-Managing is an unkind reply, if in fact you read the entire discussion.

How is it unkind? I was just suggesting you don't need to do that. Also, your description had nothing other than "How would you charge your Apple Watch at 50%?" Not sure what more I should read from that. You only mentioned the Apple Support person's suggestion in your most recent reply.

There's no way for us to know you had that discussion and what it entailed, unless you actually tell us.
