Forget about adding any so-called metadata to the résumé (you can't in Pages anyway) as you are not submitting to a website search engine. Instead, it is programmable applicant tracking software that can do some deep dives into that Word document like looking to see how closely your experience matches their ask, adding up all of the previous job date ranges to see if you are overqualified, or even if the document was created by MS Word. That might be important if they specified MS Office experience, but won't be the sole factor.
Look for the most recent books in the Library on job search, ideally written by recruiters with experience in how to write a proper résumé for a specific industry.
Your short cover letter should be the first page of a 2-page document submission, and remember that you are submitting a marketing document, not an autobiography. Limit your per-employer bullets to a brief problem, solution, and benefit measurement. Pretend that you have less than 20 seconds to scan the entire résumé because if it gets passed along after the applicant tracking software process, that is how long someone is going to glance at it to determine if it makes the intent to interview pile.
