Is there a way to change the position of the date and time on the locked screen of an Macbook Air (M1 2020)? I'm using Sonoma 14.5 presently.

You cannot move the time on your MacBook to a different position, though you can change the size. Go to System Settings > Lock Screen > Show Large Clock and turn that off to change the size.
