Recommend apps to record phone call
What are some apps that would be recommended to use to record a phone conversation? And of the apps, would the entity being recorded be informed that they are being recorded?

Before recording anything, you should find out the laws where you live. In some place, recording is illegal, in others it requires one or both parties to consent.
There are apps in the App Store that purport to record calls. Many of them do so by leveraging three-way calling. That means the company doing the recording has access to your entire conversation. Consider that carefully.
Apple will be introducing call recording in iOS 18 (availability may depend on region). I believe the feature will include an announcement to all parties.
