I opted to back up "manually" on Time Machine. However, when I want to start a back up, it says to start it "manually" through the Time Machine Menu. I DO NOT find any menu specific to Time Machine that allows me to start the back up. Where on earth is the Time Machine menu???

Settings/Preferences > time machine
Check the checkbox at the bottom of the pane to add a Time Machine menubar Icon.

Then on the Time machine Icon on the menubar, choose "back up now"
