I’m thinking about getting a new MacBook for school next week but I also want to play the Sims 4 on it. I used to use an Acer Aspire A315-42 and it was pretty slow. I want to get a new laptop that works pretty fast even with CC. Would a Pro work be faster than an Air? Would an M3 Max be better than M3 Pro? Thanks for all the suggestions!

Yes. That's what generally what "Pro" means. Air is entry level, Pro is for Professional.

Also, yes. Max is a step up from Pro and as such would be faster and more efficient, also more expensive.
Any current Mac will be able to easily run the Sims 4 without issue, even an entry level MacBook Air.

Try to visit your local retail AppleStore or Apple Authorized Resellers and touch the MacBook Pro/Air and ask to clerk staff which model is the best fit for your purpose of using it.
When you say "CC", do you mean Adobe Creative Cloud applications? If so, note that Adobe recommends 16 GB of RAM or more for many of those.
RAM is not expandable after purchase on Mac notebooks, so be sure to get as much as you need, even if you need to custom-order the Mac to get it.
