I know it's possible to scroll down on the "See All History" page, but it only goes back a year at most. How can I view entries from further back than a year in this list format?

Refer to Change General settings in Safari on Mac - Apple Support.
"Choose when to remove items from the history."
If you chose to remove items after one year then they're gone.
You can only view the history displayed
so when i select "manually", the history won't ever get deleted unless i choose to remove it manually
