I have 2 Dell S2725DS monitors. I can only get one to be recognized on my mac mini pro. One monitor using the USB C adaptor works. The monitor using straight HDMI connection does not. Any advice?

option 1) Toss the cheap Dell supplied HDMI cable(s) and test a short 1 meter high speed HDMI cable(s).

option 2) Forget HDMI and use a short 1 meter USB-C to DisplayPort cable to the second display.

Dell – Dell 27 Monitor – S2725DS
This is a 27", 2560x1440 pixel monitor with three video inputs (two HDMI, one DisplayPort). USB-C to DisplayPort and HDMI to HDMI would seem to be the most straightforward connections.
The description says the monitor has a "high 100 Hz variable refresh rate." The M2 Pro Mac mini can support that refresh rate over HDMI, but might want to use a 60 Hz refresh rate over USB-C (DisplayPort). The monitor manual indicates that the monitor supports 48 – 100 Hz refresh rates, and specifically that it can run at 59.95 Hz at native resolution (2560x1440).
