I want a larger font BUT WANT TO KEEP THE 2 page format. Constantly playing with the different fonts to get the largest with 2 pages, not one page

From iPad settings:
Settings > Display & Brightness > Text Size - adjust as required
I am specifically looking for font size in BOOKS.
Making the font larger switches the two page view to one page. I have to try every different font to see where I can remain on two pages to read, and have the letters Larger.
