I have an iphone 12 pro when I go into settins the first bar you come to with your name apple ID etc. is grayed out and cannot be accessed also the mail is grayed out and I need to reset my mailbox to connect to my mail server. cant get in. any ideas how to fix this issue

Those 2 issues are related. Go to Settings > Screen Time > Content & Privacy Restrictions > Accounts and choose Allow. Wait a few seconds for the Apple ID and Mail settings to be available again.
